a tear be shed for the Patisserie Flammang, famed for
its éclairs and for the departed glories of its
glass paneling of the Restoration Period, painted with
garlands. The Flammangs were reduced to penury by selling
their delicious cream-tarts and puff-pastries which simply
ran away with the best butter. I mourn the loss of the
good proprietors themselves as much as that of the good
confectionery The ravishing glass panels have found
their way to the Carnavalet Museum. A fat lot of good
that will do us and them!
